(5 mins) Raw Mango Chutney | Aam Ka Chunda | Gujarati Recipe

Recipe

Ingredients:
Raw mango (grated) - 350 g / 2 cups
sugar - 350 g or 1 ¾ cups [I'd prefer to use date sugar for a Whole Food Plant-Based recipe]
salt - to taste
black salt - 1/2 tsp
chili powder - 1/2 tsp
roasted cumin - 2 tsp
water - 3/4 cup

(3 mins) Raw Mango Chutney

Ingredients: mango, onion, ginger, salt, cinnamon, garam masala, chili flakes, nutmeg, black pepper, cilantro, raisins, sprouted peanuts.

(4 mins) Sri Lankan Mango Chutney

Ingredients:
1 semi-ripe mango (peeled & cut into small chunks)
1/4 tsp ginger powder
1 tsp garlic powder
1/2 tsp paprika (or chili powder)
1/2 tsp cardamom
1/2 tsp ceylon cinnamon powder
1/2 cup (4 oz) brown sugar [I'd prefer to use date sugar]
1 cup (8 oz) water
1/4 tsp salt
2 tbsp vinegar

(8 mins) Goan Raw Mango Chutney

Ingredients:
650g partly ripe mangoes
(around 500g / 3 ¾ cups chopped mango pieces)
200g sugar (1 cup minus 1 tbsp approximately) — [I'd prefer to use date sugar for a Whole Food Plant-Based recipe]
2 ½ tsp salt
¾ tsp turmeric powder
2 ½ tbsp chopped ginger (1" x 3" piece)
2 ½ tbsp chopped garlic
6 large or 12 medium-sized cloves
1 ⅓ tbsp Kashmiri chili powder
3 tbsp raisins
approx. ⅓ cup (5 ½ tbsp) vinegar

(2 mins) Raw Mango Chutney

Ingredients:
1 Raw Mango ( Peeled & Chopped)
1/2 Chopped Onion
Water
1 tsp Kashmiri Red Chili Powder
1/2 tsp Cumin Seed Powder
Salt to taste
1 tbsp jaggery [I'd prefer to use dates or date sugar for a Whole Food Plant-Based recipe]

(2 mins) Raw Mango Chutney

Ingredients:
500g mango
3 green chili
100g coriander
3 tsp salt
1/4 sp asafoetida powder ('heeng')
3 tsp cumin seeds
1 tsp red chili powder
1/4 cup water

(7 mins, Punjabi) Sweet & Sour Mango Chutney

Ingredients: Mango, Tomato, Garlic, Cilantro, Green Chili, Red Onion, Lemon

(4 mins) Raw Mango Chutney

Ingredients:
2 medium raw mangoes (peeled)
1/2 cup cilantro
1 tbsp mint leaves
2 green chillies
2 cloves of garlic
1 tbsp sugar [I'd prefer to use dates or date sugar for a Whole Food Plant-Based recipe]
1/2 medium onion
2 tbsp freshly grated coconut
1/4 tsp roasted cumin powder
salt to taste

(5 mins) 4 Types of Mango Chutney

[In the video, mustard oil is added on top of Recipes 2 and 3; we don't use any oils in Whole Food Plant-Based recipes; I would introduce some mustard powder to this recipe instead]
