Apparently, we can eat buckwheat after overnight soaking! Or just 15 minutes of soaking followed by keeping the soaked buckwheat in a jar overnight. Wow! The resulting buckwheat is mildly crunchy and nutty. We have lots of YouTube videos explaining how to combine such raw soaked buckwheat with fruits, berries, seeds and other healthy ingredients for a flavorful raw buckwheat porridge!

Coconut milk is being suggested in this video; I prefer to use some other plant-based milk like almond milk. Coconut milk is not recommended by Dr Greger. This recipe has coconut sugar. I prefer to use dates as sweetener.
