Tim Kaufman had Ehlers-Danlos syndrome, weighed 400+ pounds, on several meds, chronic pain, addicted to Fantanyl, alcohol & fast food, father of two. What made him change? A couple of deaths in his family, and a realization that he got to do something to last another year for his family. He sought bariatric surgery — was denied!

Next, he chanced upon Fat, Sick & Nearly Dead (a documentary showcasing Joe Cross who did a 30-day (maybe 60-day) juice fast (guided by Dr Fuhrman) to find relief from an autoimmune condition). So he did a 30-day juice fast and started feeling great! NetFlix recommended Forks Over Knives to Tim, so he watched that too! And changed! His wife changed too. Dramatic changes followed.

Medicines vanished. He started walking, then hiking and jogging. His total cholesterol used to be in 300s; dropped dramatically to merely 102! And then, he opened a plant-based restaurant! Prior to his transformation, he had never cooked before. All in all, an amazing personal journey narrated by Tim Kaufman - he's amazing.

Find Your 'Why'

In the first video above, Tim Kaufman has helpful tips for getting started:

  1. Find your 'WHY' - something you're deeply attached to.
  2. Keep it simple - find foods that you like to eat, then just repeat
  3. Focus on your next plate, not the future.
  4. Find an activity that you enjoy - hiking, biking, walking, ..
  5. Focus on your health, not a number on a scale, or your size.
  6. Stop thinking. Start doing. Just Do It!
  7. Don't look for 'motivation' to be healthy. Be responsible: it's our job (our responsibility) to be healthy.
  8. It's a journey - a simple one but understand that there will be challenge. Every day, we have to fight our battles. So get out of bed, eat plants & move your body! All you do have to do a bit more than you did yesterday.
