Ann Esselstyn: How to Eat Plant-Perfect (2013) explains Ann Esselstyn's "Plant Perfect" guidelines: Point number 1 in this article has good ideas. Jane Esselstyn's YouTube Channel has excellent on how to cook oil-free recipes in harmony with Dr Esselstyn's guidelines for optimum heart health.
Vegan Richa: How to Cook Indian Food Without Oil & Oil-Free Dal Tadka. She has a popular blog and a highly-rated Indian vegan recipe book but most of her recipes are non-WFPB.
Sanjyot Keer (27-year old celebrity chef): Oil-Free Rajmah and Oil-Free Chhole. Main techniques showcased in these videos: (a) Dry roast a bunch of fresh condiments (in their seed form, not in powder form), then grind the roasted seeds in a mixer-grinder. (b) Onions may be sauteed in water. No oil. (c) Recipes are also without nuts and nut pastes, so they become low fat (some oil-free Indian recipes introduce nut pastes (cashew paste) to replace oil).
Oil-Free Pakora with Red Garlic Chutney uses yogurt ('dahi') but it has 10+ other ingredients; so even after removing yogurt ('dahi'), the final preparation should taste really good!
Subah Jain: Awesome cooking videos! She has 7-8 'general recipe' videos for chapatis, vegetable curry, smoothies, salads, juices. Great for adopting a Nature Cure (Naturopathy) food system which is pretty much WFPB Diet minus salt. Additionally, beans are removed for sick people.
Nupur Sampat: Pav Bhaji and Dal Makhani videos showcase some healthy cooking ideas: (a) Steaming our veggies instead of boiling them, (b) Preparing a tomato-based gravy in a mixer grinder instead of cooking on flame, (c) Replacing oil by cashew paste (or some other nut paste).
Note: In both recipe videos, Nupur uses a little bit of oil for tempering some spices (preparing 'tadka'); oil tempering may be replaced by dry roasting or simply replacing oil with water. Since there are so many flavorful ingredients in both recipes, you won't notice the absence of oil.
Chef Jeff Doucette: Cooking without Oil! He has shared over 150+ WFPB recipes at Vegan Chef Jeff Doucette. He maintains a FaceBook support group: Chef Jeff's Plant-Based Recipes. Cheff Jeff switched to WFPB after experiencing a heart attack. He has had great success in reversing his symptoms through WFPB.
