A fascinating, traditional, oil-free Gujarati recipe called 'Umbadiyu' that's prepared in claypots. The ingredients are a variety of tubers: Sweet Potatoes ('shakarkandi'), Indian purple Yam ('ratalu'), Elephant Foot Yam ('suran') and veggies like carrots and Surti Papdi Beans, along with a variety of spices. Nothing is peeled — we eat the ingredients in their whole forms, along with their skins.

A detailed video showing a modern version of Umbadiyu — it has oil in the chutneys but we can easily replace the oil with powdered peanuts and sesame seeds and this preparation will continue to taste awesome.

Ingredients:

(offset 0:39) Green Chilli Paste:
Salt 1-2 teaspoons
50/100 grams green chilli
50/100 grams ginger
50/100 grams garlic

(offset 1:40) Muthiya / Fenugreek Dumplings:
* One medium sized bowl of gram flour(besan)
* One medium sized bowl of wheat flour
* One medium sized bowl of fresh fenugreek
* Some dried fenugreek
* 1 teaspoon Kashmiri chilli powder
* Half teaspoon turmeric powder
* Half teaspoon garam masala
* Half teaspoon green chilli paste
* A pinch of baking soda
* Salt to taste

* Fresh coriander - 1 small bowl
* Kashmiri red chilli powder- half teaspoon
* Turmeric powder- one fourth of a teaspoon
* Coriander powder - half teaspoon
* Salt - one fourth teaspoon
* Green chilli paste- one fourth teaspoon

* Peas- 1 small bowl
* Pavta* beans- 1 small bowl
* Green pigeon peas- 1 Small bowl
* Flat beans- 1 medium bowl
* Beans cluster - 1 small bowl
* Hyacinth bean/Valor Indian papdi- 1 small bowl
* Flat beans/desi papdi - 1 small bowl
* 4 small eggplants
* 4 baby potatoes
* 2 Raw bananas
* 1 small/ 100 grams of purple yam
* 2 sweet potatoes or 1 big/100gm
* Green garlic
