A fascinating, traditional, oil-free Gujarati recipe called 'Umbadiyu' that's prepared in claypots. The ingredients are a variety of tubers: Sweet Potatoes ('shakarkandi'), Indian purple Yam ('ratalu'), Elephant Foot Yam ('suran') and veggies like carrots and Surti Papdi Beans, along with a variety of spices. Nothing is peeled — we eat the ingredients in their whole forms, along with their skins.
A detailed video showing a modern version of Umbadiyu — it has oil in the chutneys but we can easily replace the oil with powdered peanuts and sesame seeds and this preparation will continue to taste awesome.
