A team of WFPB doctors tried to get plant-based meals served at Rush University Hospital. This 2-page article above narrates their story. The team included Dr Kim Williams (former President of American College of Cardiology; he was Chief of Cardiology at Rush when this attempt was made). What was the outcome of their efforts? The last para of the article:
"Fortunately, after more than six months of persistent communication, sharing of resources, and recruiting outside professional assistance, we received news that Rush will be implementing a menu that no longer includes sausage and bacon on the hospital trays, and will merge vegetarian options onto the main menu effective July 2022. While we continue to push for further positive changes, we are excited to see Rush progress towards offering a more plant-forward plate."
… so they removed bacon and sausage (classified as IARC Group 1 carcinogens since 2015) from the menu. And the vegetarian menu become a section of the Main Menu, thereby making it more prominent. Marginal changes IMO but in the positive direction.
