Organic foods use fewer pesticides and herbicides, and are environmentally more friendly. My understanding is that if our budget allows for it, we should buy organic. Otherwise, we should still continue to eat fresh produce (fruits and vegetables) even though they are non-organic. About 80% to 90% of my food is organic.
Organic vs non-organic can be a tricky decision because organic foods are more expensive! Whole Food Plant-Based doctors have a mixed opinion.

Every year, Environmental Working Group (EWG) publishes lists of fruits and vegetables with minimum and maximum traces of pesticide content.
Dr Greger argues that organic meat continues to have sufficiently large amounts of carcinogens and superbugs.
