When we convert soybeans into soybean oil, we amplify fats but lose other macronutrients (proteins, carbohydrates) and various micronutrients (vitamins, minerals, phytochemicals, antioxidants) found in whole soybeans. Also, we increase calorie density (calories by weight). High calorie density foods like oils (fat extracts) promote overeating, just like added sugars (carbohydrate extracts) and salt do.
