Cassava, also known as manioc and yuca, is a starchy tuber eaten all over the world for its density of carbohydrates. Cassava flour is the main staple food for many cultures. Cassava starch can be processed into tapioca powder. Cassava needs to be prepared properly to remove its content of cyanide usually through boiling and soaking.

Cassava Flour

Cassava flour is made by peeling cassava foot, crushing or grating, dewatering under pressure (to reduce moisture content), dehydrating, milling & sifting. Is it a whole food? The dewatering step removes some nutrition.
