Massaged Kale Salad (WFPB, Oil-Free)

Massaged kale is so flavorful! The key idea is to create kale strips. Then moisten these kale strips with either vinegar or avocado or some plant-based sauce, then massage it between our palms for about 5 minutes. Kale strips soften and become delectable! We can then add a variety of other plan-based ingredients and dressing.

A massaged kale salad recipe by the Esselstyn family! Can't get better than that! They use raw kale + lemon + hummus for massaging. Plus a bunch of goodies (onion, tomatoes, oranges) to make the salad. This is a 'greens & beans' recipe, an iron-rich recipe, and a recipe with both cruciferous (kale, raw) and aliums (onion, raw).

An amazing combination of cruciferous (kale, raw), beans (chickpeas), tubers (sweet potatoes) and various goodies like nutritional yeast, onion and so on.

Steps in video description:

(1) Wash and de-stem 4 cups of kale that has been torn or chopped into bite-size pieces.

(2) Place the 4 cups of kale into a large bowl.

(3) Add your favorite salad dressing. Use one that has lemon juice or vinegar and a little salt but I believe any dressing you like will do.

(4) Now, begin to massage the kale by lifting it up and massaging it with you hands. Do it until the kale softens. DO NOT OVER-MASSAGE or the kale will get mushy.

(5) Add your favorite toppings to the salad OR EAT IT plain. It is delicious and the kale has changed from being tough and chewy to a much softer, more easy-to-chew texture. I used shredded carrots, red cabbage, chopped cherry tomatoes, corn and chopped scallions (or green onions)

(6) That's it! If you don't eat it all, it will store a few days in a lidded-container for about 3-4 days.
