Do we have any dairy-free Ayurvedic cookbooks? Yes! In other words, Ayurveda cookbooks with no dairy products like milk, ghee, butter, buttermilk, curd, paneer. Such books usually have no processed foods (no refined flours, no refined sugars, no packaged foods) but they use oils. So recipes can be made Whole Food Plant-Based by making these recipes oil-free.
Sahara Rose Ketabi

Recipe Book: Eat Feel Fresh: A Contemporary, Plant-Based Ayurvedic Cookbook by Sahara Rose Ketabi (256 pages, 2018). As of September 2021, the book has 2,000+ 5-star reviews (95% of reviews are 5-stars) on Amazon. Worth checking out.

Overview:

  • Dairy-free recipes: no milk, no ghee, no butter, no buttermilk, no paneer, no cheese. And these recipes are prepared keeping Ayurvedic knowledge in mind. This is the biggest selling point of this book for WFPB community.
  • Some recipes do have oils for cooking (which WFPB followers may remove by dry roasting spices like cumin, or using water instead of oil, or using nut pastes like cashew paste instead of oil).
  • Some recipes use various 'healthy sweeteners', similar to those found in ForksOverKnives recipes. Personally, I encourage my friends to minimize healthy sweeteners other than dates (explained in this article) … but they are allowed by WFPB doctors and nutritionists.
  • Some recipes mention protein powders (optionally) -- luckily, these powders are generally listed as optional in a recipe. Protein powders are not encouraged by WFPB doctors.

On the whole, Eat Feel Fresh is a unique recipe book that combines Ayurvedic knowledge with WFPB guidelines, especially the No Animal Products (no Meat, no Fish, no Milk, no Eggs) and No Processed Foods guideline; only the No Oil guideline is missing but we can follow it with the tweaks mentioned above.

How To Remove Oil From Recipes?

How To Cook Oil-Free has several articles that explain. Here is a brief overview of techniques:

  • Saute in water instead of oil.
  • Dry roast spices like cumin.
  • Use nut pastes like cashew paste instead of oils.
  • For pancake-like preparations ('dosas, utthapam, cheelas, paranthas'), use non-teflon, non-stick griddles.
  • For waffles, use non-stick ceramic waffle makers.
  • For baking, use non-stick bakeware like Silpat instead of brushing pans or ingredients with oil.
