Rama Ganapathy has published a nice collection of beans ('dals' in Hindi) recipes from various parts of India. She strives for authentic taste and texture. In her PDF publication, she has removed oil in almost all of her recipes.
Dr Bimal Chhajer was inspired by Dr Dean Ornish to tackle heart disease via lifestyle changes. But his food system allows for dairy products, so I wouldn't call it Whole Food Plant-Based but it comes close to it.
