Sanjyot Keer (1992-) is a celebrity chef. He has a few WFPB recipes which are delectable! The videos are excellent quality — they may be watched for their artistic content alone :)

No-Oil Masala preparation technique: dry roast a bunch of fresh condiments (in their seed form, not in powder form), then grind the roasted seeds in a mixer-grinder. Onions may be sauteed in water. No oil.

Recipes are also without nuts and nut pastes, so they become low fat. Some oil-free Indian recipes introduce nut pastes (cashew paste) to replace oil.

This recipe has yogurt ('dahi') but it has 10+ other flavorful ingredients; so even after removing yogurt ('dahi'), the final preparation should taste really good!

Oil-Free Vegetable Soup

Lauki (bottle gourd), carrots, tomatoes, beetroot, onion, ginger, salt. Boiled together in water for a long time, then cooled down and blended in a blender.
