I found Dr Greger's iron-related videos helpful in understanding the difference between iron found in animal products (heme iron) and iron found in plants (non-heme iron). Also, I realized that iron overload is something to be aware of; it can and does cause sickness in a fairly large number of people in USA.
Iron Guidelines by Dr Greger

The 'Iron' section of Optimum Nutrition Recommendations by Dr Greger (originally written in 2011, revised in 2016) says:

Iron: "All menstruating women should increase their absorption by combining foods rich in iron and vitamin C at meals and should get checked for iron-deficiency anemia every few years. Men should be checked for an iron overload disease before any attempt to increase intake."

In this video, Dr Greger explains:

"And so, before going on iron supplements, I would suggest talking to your physician about first trying to treat it through diet alone—by eating lots of healthy iron-rich foods, like chickpeas and pumpkin seeds, while consuming vitamin C-rich foods at the same meal, such as citrus, tropical fruits, broccoli, bell peppers, which improve plant iron absorption, while at the same time avoiding drinking tea and coffee with your meals, which can impair iron absorption."

Questions: Dr Greger's guidelines led to two questions:

    This is an important question! Dr Greger offers lovely insights! It all boils down to heme vs non-heme iron; explained below.

"Dietary phytate, rather than fiber per se, might be the most important variable governing the frequency of colonic cancer," as we know phytate is "a powerful inhibitor of [the] iron-mediated production of hydroxyl radical[s], a particularly dangerous" type of free radical. So, the Standard American Diet may be a double whammy — he heme iron in muscle meat, plus the lack of phytate in refined plant foods to extinguish those iron radicals.

A little leaching metal can be a good thing in the case of straight iron, like a cast iron skillet, which can have the beneficial effect of helping to improve iron status, helping to potentially reduce the incidence of iron deficiency anemia among reproductive-age women and children. The only caveat is that you don't want to be frying in cast iron. Frying isn't healthy regardless, but at hot temperatures, vegetable oil can react with the iron to create trans fats.

"Heme iron, on the other hand — the iron found in blood and muscle — acts as a pro-oxidant and appears to increase the risk of diabetes, whereas plant-based, non-heme iron appeared safe. The Mediterranean diet is protective compared to the Standard American Diet — no question.
