STARCH RICH: ripe plantains.

LEAFY GREENS: mixed greens (in copious amounts, below everything else; not seen in pic).

RAINBOW VEGGIES: tomato, cucumber, green beans, red bell pepper, yellow zucchini, ridge gourd, sweet onion.

FRUIT & BERRIES: rambutan, red grapes, barberries, lemon.

FRESH HERBS: Thai basil, perilla leaves, cilantro, curry leaves.

DRIED HERBS: dried thyme, dried methi leaves, dried oregano.

MISC: dulse flakes, sorrel leaves + okra chutney, nutritional yeast, 5-spice mix, flavored vinegar.

(optional) BEANS: none.

(optional) WHOLE GRAINS: none.

What makes this salad so tasty? Ripe plantains + red grapes + rambutan (tastes like lychees) makes it delicious. Along with fresh herbs, spices, lemon and vinegar.

STARCH RICH: purple sweet potato, ripe plantains.

LEAFY GREENS: baby kale. Served on romaine lettuce.

RAINBOW VEGGIES: ivy gourd, tomato.

FRUITS & BERRIES: grapes, pomegranate, avocado.

FRESH HERBS: basil, perilla leaves, cilantro.

MISC: lemon and misc spices.

(optional) BEANS: none.

(optional) WHOLE GRAINS: none.

Sweet potatoes are chewy, so it's best to grate them and eat them fresh. I discovered that purple sweet potatoes (grated) and plouts go well together!

LEAFY GREENS: romaine lettuce, radicchio.

RAINBOW VEGGIES: chayote, ridge gourd, red n yellow peppers, cucumber, rhubarb, sweet onion.

MISC: flavored vinegar, 1tsp hempseed, misc spices (lemon-pepper, turmeric root, ginger root, methi leaves, …).

(optional) WHOLE GRAINS: sweet corn (lised under STARCH RICH above).

Some extra plantains (ripe), mango or grapes would have made this sweeter.
