A Simple Salad

A simple plantain-based salad has only 3-4 ingredients: (a) Ripe plantains, (b) Leafy Greens (in copious amounts), (c) Juicy Fruits (in small quantities), and (d) Flavor enhancers: lime-lemon-vinegar, herbs & spices.

Ripe plantains: Start with ripe plantains. They look like large-sized yellow bananas; not overripe and super-sweet plantains but yellow colored plantains that look like large bananas. See How To Eat Raw Plantains. Ripe plantains are starch-rich & satiating.

Leafy greens: "Leafy greens are the best veggies!" — Dr Greger. Experiment with 6-7 leafy greens: see which ones we like: arugula, watercress, radish leaves, red lettuce, romaine lettuce, frisee, .. try a few combinations. Everybody loves romaine lettuce. Try baby kale instead of regular kale; baby kale leaves are soft. Try to eat as many leafy greens as possible daily. My taste buds changed over time. I love leafy greens now.

Juicy fruits: Experiment with sliced grapes or peach or mango. Pomegranate goes well with raw vegan salads.

Lime-lemon-vinegar, Herbs & Spices: Add some flavored vinegar or lime & lemon plus a mixture of dried herbs (Herbs de Provence, for example, from Trader Joe's) and a spice mix (there are many SOS-Free International spice mixes available at Local Spicery online store). Make sure we have several options for tart spices at home: invest in sumac, lime-pepper seasoning, dried lemon peels, mango powder, anardana (pomegranate powder) and so on.

Fresh herbs: If we have time, mince any combination of fresh mint, fresh basil, fresh cilantro, curry leaves (from Indian market), fresh parsley, .. If short on time, consider dried herb combinations (Herbs de Provence, Herbs de la Garrigue, ..) or individual dried herbs like oregano, basil, thyme, .. Try 'dried methi leaves' from Indian stores. To save $, we can grow many fresh herbs at home.

Dulse flakes: A sea veggie that's a good source of iodine for SOS-Free lifestyle. It also makes salads tasty. We may experiment with nori, arame & wakame too but I like dulse flakes.

This simple combination of fruits (ripe plantains + other juicy fruits) and as many leafy greens as possible is a good foundation for salads. We may keep experimenting with such salads for several days. Then move on to additional steps below.
